Veggie Rice Casserole
Ingredients:
1 pkg California Blend frozen vegetables
3 C cooked minute rice
1 stick butter
1 lg can cream of chicken soup
1 lg bag shredded cheddar
Directions:
Slightly cook vegetables. Melt butter.
Sautee celery and onion.
Add all ingredients to a large crock pot and cook on low heat for 4 or more hours until creamy.
Or place all ingredients in a greased 9 x 13 pan and bake at 350 degrees for 45 minutes.
You can use long grain rice as a substitution.
Mom (Sheila) and I used to make this to go with the Meat Pies for Christmas Eve dinners. Great for leftovers too.
