Peanut Butter Blossoms
Ingredients:
1 3/4 C flour
1/2 C sugar
1/2 C brown sugar
1/2 t salt
1 t soda
1/2 C shortening (I use butter flavored crisco)
1/2 C creamy peanut butter
1 egg
1 t vanilla
48 chocolate kisses (I use Hershey)
Directions:
Combine all ingredients except flour and kisses. Blend well using a mixer.
Slowly add the flour.
Form small balls out of the dough and place on parchment lined baking sheets leaving space between each. This recipe should make 48 so be sure to make them small, a little bigger than the bottom of the kiss.
Bake at 375 degrees for 10-12 minutes.
Immediately place a kiss in the center of the cook as they come out of the oven.
Let cookies cool completely before placing in an airtight container as the chocolate stays warm for quite a while.
These are a Christmas favorite and look great on a holiday platter of desserts!
