Irish Buttermilk Scones

Ingredients:

2 T sugar

1T baking powder

1.2 t salt

1/4 t baking soda

2 Cup flour

1/2 Cup buttermilk

1/2 Cup dried currants

2 eggs

Method:

Preheat oven to 425 degrees. Grease a large cookie sheet.

In a medium bowl, mix sugar, baking powder, salt, baking soda and flour.

Cut in 6 T margarine until crumbs.

In another small bowl, with a fork, beat buttermilk, currants and eggs.

Stir buttermilk mixture into the flour mixture until blended.

Turn dough onto a floured surface and sprinkle with flour.

Knead 15 times. Divide dough into two halves. Shape both into a ball.

Cut each ball into 6 wedges but do not separate.

Bake 12 minutes.
