Coleen’s Chinese Chicken Salad
Ingredients:
3 to 4 boneless skinless chicken breasts boiled and shredded
2 heads of lettuce shredded (romaine is best)
3 to 4 stalks of celery chopped
2 to 3 green onions chopped fine
1 can of water chestnuts drained and chopped
1 cup slivered almonds
Saifon Noodles fried
Directions:
Saifon or Maifun rice noodles (Dynasty brand is good) fry them and pat dry to remove as much oil as possible. Be careful oil must be just right for them to blow up in size. It’s shocking at first but goes quickly. The leftovers can be saved in a sealed air tight container for the future.
Dressing:
2 tablespoon sugar
2 tablespoon soy sauce
2 teaspoon pepper
½ cup oil
4 tablespoon sesame oil
6 tablespoon seasoned rice vinegar
1 teaspoon dry mustard
2 T sesame seeds (toasted if you wish)
Shake all ingredients together and pour over salad before serving.
