Blueberry French Toast
BLUEBERRY FRENCH TOAST
Ingredients:
12 slices of white bread with crusts removed
2 – 8 ounce packages of cream cheese – (it is not necessary to use all of both…. I have used one and it is plenty)
1 Cup fresh or frozen blueberries
12 eggs
2 Cups milk
1/3 Cup syrup or honey (we like to use syrup)
Preparation:
Grease a 9 x 13 dish. Cut bread into triangles (in half on a diagonal and half on the diagonal the other way)
Layer half the bread on the bottom of the pan.
Cut cream cheese into cubes and layer on top of the bread.
Layer the blueberries on top of the cheese.
Layer the rest of the bread on top of the blueberries.
In a large bowl mix the eggs, milk, and syrup. Blend well and pour over the bread layers. Cover and chill. (I make it the night before and refrigerate till morning.)
Cover with foil and bake at 350 degrees for 30 minutes. Uncover and bake an additional 25-30 minutes longer.
While the toast is baking, create the sauce on top of the stove in a saucepan using the following ingredients:
Sauce:
1 Cup sugar
2 Tablespoons of cornstarch
1 Cup water
1 Cup fresh or frozen blueberries
1 Tablespoon butter
Combine all ingredients except the blueberries and butter into the saucepan and slowly bring to a boil. It will thicken as it gets hotter. Boil for 3 minutes and add the blueberries and butter and simmer for 8 minutes.
Drizzle the warm sauce over a square of the French toast.
This is a great recipe for a large brunch or a holiday morning. It is sweet and fancy. It is wonderful with a fruit salad.
