Windsor Butter Tarts

Create pie dough of your choice. (See pie crust recipe)

Use a glass to cut into circles large enough to fit into a muffin tin and reach almost to the top.

Ingredients for filling:

1 Cup brown sugar
2 eggs
1 heaping T butter or margarine
2 T milk
¼ Cup Karo syrup
A “few” raisins (Mom liked only a few, I however liked many more than a few)

Directions:

Mix filling ingredients together in a bowl till coated.

Drop small pie crusts into each regular sized muffin tin.

Add filling into each but not all the way to the top as it will bubble up.

Bake on 425 degrees until light brown or 10-12 minutes.

Cool completely before serving as the filling is very hot and bubbly.

 

 

This recipe came from Canada…. Mom received it from family growing up in Windsor. We called them Canadian Butter Tarts but I think they are really Windsor Butter Tarts. Great with coffee and tea and a little whipped cream.
