Downriver Delights
DOWNRIVER DELIGHTS
(makes about 5 dozen)
Vegetable cooking spray
2 Cups flour
1 teaspoon baking soda
1 teaspoon salt
½ teaspoon baking powder
8 oz (2 sticks) unsalted butter, softened
¾ Cup granulated sugar
¾ Cup light brown sugar
2 Large eggs
1 teaspoon vanilla extract
1 ½ Cups old fashioned oatmeal
6 oz semisweet chocolate cut into chunks or chocolate chips
3 oz (3/4 Cup) pecan halves
½ Cup shredded coconut
Preheat oven to 350 degrees. Coat baking sheet with cooking spray or parchment paper.
Sift flour, baking soda, salt, and baking powder in a medium bowl.
Beat butter and sugars in another bowl with a mixer (3 min) add eggs, beat well add vanilla.
Slowly add flour mixture, add oats, chocolate and pecans and coconut until blended.
Use an ice cream scoop or a big spoon and scoop out onto baking sheet (bigger the better and rounded makes a nice cookie). Leave 3 in between or just under.
Bake until edges are lightly brown 11 – 13 minutes. Let cool 5 minutes on a wire rack.
These are wonderful, the blend of chocolate, coconut and nuts makes it a real delight.
