Lent Salmon Patties
LENT SALMON PATTIES
Ingredients:
2 large cans of Red Sockeye Salmon
3 stalks of green onion chopped fine
2 eggs
¼ C milk if necessary
salt and pepper
¼ C oatmeal or cracker crumbs
1 T parsley
3 T oil
Directions:
Open cans of salmon and sift through to remove bones and skin… I like to rinse it well. Place the fish in a large mixing bowl. Add additional ingredients except the oil. Mix and form into patties. (possibly 6)
Pour oil into a frying pan and put on medium heat. Place patties in hot oil. Fry till golden brown on both sides.
Serve with mashed potatoes and peas!
The McMahon house always honored the church calendar and so we ate the recommended menu items on Fridays in Lent. No meat. Fish was allowed and macaroni and cheese and breakfast items for dinner such as pancakes or French toast and eggs.
